Why an espresso is good for you         how to make 
  the perfect espresso

>  Using a Traditional Espresso Machine 

  • Grind coffee until it becomes fine enough.Coffee filter-holder
  • Wait until the machine reaches the correct temperature 
    (usually when indicator's light on).
  • Ensure the filter compartment is clean.
  • Fill the filter with 6 - 7 grams (1 tb spoon) of ground coffee per cup.
  • Press the coffee down lightly and evenly. If pressed too hard 
    the coffee may become too strong; if too loose, it will be too weak.
  • Your pump machine should extract espresso for a very short time.
  • Your espresso should be thick and creamy.
  • Don't forget to try it the true Italian way: sip a little water first, and then sprinkle some granulated sugar so as not to break the creamy surface.

  • Adjust grinder's settings to the fine ground (least number is finest ground) but not too fine.
  • Push the button... and enjoy your perfectly made espresso.

Keep your coffee beans fresh

  • Once your pack of coffee has been opened, it should be placed in a sealed container or wrapped
    tightly using a scotch tape and stored in a refrigerator.


Four Rules for a perfect Espresso

Preparing espresso is an art and a science, and it has its own Rules:

  • The Blend: Only blends made up exclusively of Arabica coffee provide a harmonious, well-balanced taste, striking a happy compromise between bitterness and acidity as well as imparting rich, fragrant aroma and full body.

  • The Grinder: You can experiment with an adjustable grinder until you find the perfect setting (to allow an extraction time of between 15 and 20 seconds for home brewing). The exact dose of coffee: 6 to 7 grams per cup!

  • The Machine: The espresso machine must be able to heat water up to 90’C (194’F) and to exert pressure equal to 9 atmospheres or more.

  • The Operator: His or her main function is to follow the other three rules and to tamp down the coffee with just the right turn of a hand.

Buying
When purchasing coffee, always ask when it was roasted. Many common misconceptions exist when it comes to judging the freshness and optimum time to experience a roasted coffee at its peak of perfection. Generally coffee is best if used a day or two after roasting, and if kept in an air-tight container, flavor should not diminish significantly until after seven to ten days. Old coffee beans may appear very oily, will have little or no aroma, or will take on a somewhat unpleasant aroma.


Grinding
Never grind more coffee than you will need to use. Once the beans are ground, the flavorful oils are exposed to the damaging air. As these oils dissipate, so will the flavor of your coffee. Once ground, coffee will begin to lose its flavor almost immediately. Espresso requires an extremely fine grind, almost powder-like with a slight grittiness. The key to the proper espresso grind is the extraction time. After the proper dose and tamp, one ounce of espresso should be extracted in approximately 25 to 30 seconds. If the one ounce extraction occurs in less than 25 seconds, grind your coffee finer. If the extraction occurs in longer than 30 seconds, grind your coffee coarser.


Dosage
For espresso, allow 7 to 8 grams for a single shot, and 14 to 16 grams for a double shot.
